Start With Serving Size — Everything Else Depends on It

A package that appears to be a single serving for one person eating a meal may list its nutritional information based on a serving that’s half the package — meaning every number on the label doubles if the whole package is consumed.

The “Added Sugars” line (introduced in the 2020 update) is the most useful number for identifying sweetened products: it shows specifically how much sugar was added beyond what naturally occurs in the ingredients. A flavored yogurt with 20g total sugars and 15g added sugars is a very different product from one with 12g total sugars and 0g added sugars, despite both appearing on the same “yogurt” shelf.
Protein: the protein content per serving helps identify whether a food marketed as a protein source actually provides a meaningful protein amount. Twenty grams of protein is a meaningful contribution; 4 grams (common in many “high protein” marketed products) is not particularly significant. The protein number also helps identify products where the protein claim is proportional to their carbohydrate and fat content — a “high protein” bar with 10g protein, 30g sugar, and 15g fat is a candy bar with a modest protein addition, not a protein supplement.
Vitamins and Minerals: the 2020 update changed the required vitamins and minerals from vitamin A and C (which are rarely deficient in Western diets) to vitamin D and potassium (which are commonly deficient). Calcium and iron remain required. These numbers are expressed as percentage of daily value, making them useful for identifying whether a food is a meaningful source of these nutrients or provides negligible amounts despite front-of-package vitamin claims.
